A taste of summer! Ginger cookies were always a part of a summer on Thetis Island, a beautiful, isolated place off the coast of Vancouver Island. This updated version has some added goodness and wonderful flavour!

- 3/4 cup vegan butter I used Earth Balance
- 3/4 cup brown sugar
- 1/4 cup brown sugar
- 2 flax "eggs" or egg replacer Just combine 2 Tablespoons of ground flax seed with 6 Tablespoons of water and let gel for a few minutes.
- 1/2 cup pumpkin puree
- 1/4 cup molasses
- 1-2 teaspoons freshly grated ginger Adjust ginger to desired level of gingery-ness.
- 1 teaspoon vanilla
- 2 1/2 cups unbleached flour
- 1 cup almond flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 3/4 teaspoon salt
- 1/2 teaspoon allspice
- 1/2 teaspoon baking soda
- 1/2- 3/4 cup chopped candied pineapple Save some pieces to top the cookies.
- 1/2 cup organic sugar
- 1 teaspoon cinnamon

- Heat oven to 350 degrees F. Line cookie sheets with parchment or silicone mats.
- In a large mixing bowl, beat the butter and the sugars together until fluffy. Add the molasses, "eggs" , vanilla, grated ginger, and pumpkin. Beat again.
- In a separate bowl, sift together all the dry ingredients, except for the pineapple.
- Stir the dry ingredients into the wet and mix until combined.
- Stir in the chopped pineapple.
- Roll dough into small, 1 inch balls. Roll each ball in sugar mixture and place on prepared cookie sheet, leaving room for the cookie to spread. Continue until all dough is used.
- Put a piece of candied pineapple on the top of each cookie and press lightly with a bottom of a glass.
- Bake for about 8-10, until cookies have set. An extra minute or two will make a crunchier cookie. Be careful not to overbake.
- Remove cookies from baking sheet after giving them a moment to set. Allow to cool on a rack. Enjoy!
