Za’atar Man’ouche

This is a new taste and recipe in our house. A gift of spice from our travelling neighbours was a wonderful opportunity to try something different! This combination of flavours is a popular Middle Eastern treat, and one worth trying. A simple, quick-rising yeast dough is spread with a unique combination of flavours, including thyme and toasted sesame seeds. Great as an appetizer, this is often served with a healthy addition of tomatoes, cucumber, radishes and olives.

Instructions
  1. Stir together all your dry ingredients in a large mixing bowl fitted with your kneading hook.
  2. Warm your oil a little and add it together with your warm water to the the dry ingredients.
  3. Mix until it forms a smooth, soft dough. Add a little more flour if it is still too sticky.
  4. Oil the bowl and dough and cover with a cloth. Put in a warm location and allow the dough to rise for a half hour, or until double in size.
  5. Punch down the dough and divide into four or six balls. Shape each ball into a flat disc approximately six inches in diameter. Place on a baking sheet lightly coated with cornmeal to prevent sticking.
  6. Mix together the spice mix and the oil. Gently brush a generous quantity over each bread, leaving a little uncovered crust around the edges.
  7. Heat oven to 400 degrees F., letting brushed bread rise for 10-15 minutes while the oven is heating.
  8. Bake in your hot oven for 6-8 minutes, or until golden brown.
  9. These are best served warm but they reheat well! Add on some traditional chopped tomatoes, cucumbers, radishes, and/or olives. Enjoy something different!
